Baked Avocado With Eggs


The saying goes "you can't make everyone happy, you're not an avocado". You CAN, however make everyone happy with this yummy baked avocado recipe, full of healthy fats and nutrients for healthy hair, skin and digestive system.


INGREDIENTS

● 1 Avocado (ripe and pitted)

● 2 Eggs (large)

● 3 Cherry Tomatoes (halved or diced)

● 1/8 tsp Sea Salt (to taste)

● 1/8 tsp Black Pepper (to taste)

● 1 tsp Chives (fresh, diced)

DIRECTIONS

  1. Preheat the oven to 350°.

  2. Slice the avocado in half and scoop about 1 tablespoon worth of avocado out of each half and place the hollowed avocados in a baking dish. Divide the scooped out avocado onto plates or reserve for later use.

  3. Crack one egg at a time into a bowl and use a spoon to transfer the yolk into one avocado half. Carefully pour in as much egg white as you can fit without spilling over. Add the diced tomatoes and repeat with the remaining eggs.

  4. Season with salt and pepper and place into the oven. Bake for 20 - 25 minutes until the whites are set.

  5. Plate and top avocados with chives. Enjoy.
