Beef Stroganoff

● 1 tbsp Butter

● ½ Large Clove Garlic (minced)

● 7 ozs Extra Lean Ground Beef (80%)

● Sea Salt & Black Pepper (a pinch to taste)

● 3/4 cup Mushrooms (sliced)

● 1 tbsp Water

● 3/4 cup Sour Cream

● 1/4 tsp Paprika

● 1 1/2 tsps Parsley (freshly chopped)


  1. Preheat a skillet over medium heat and add the coconut oil. Once hot, add the garlic. Cook for 1 minute until fragrant while stirring.

  2. Add the ground beef and break up the grounds with a spatula or wooden spoon. Season with salt and pepper and cook for 5 minutes.

  3. When done, transfer the beef to a bowl and cover with a plate.

  4. Keep the same skillet and turn the heat back up to medium.

  5. Add the mushrooms to the pan. Pour in the water and continue cooking for 5 minutes or until the mushrooms are tender.

  6. Turn the heat to low. Add the sour cream, paprika, and parsley to the skillet. Stir until well combined, then add the beef back into the skillet and stir once more. Cook for another 2 minutes on medium-high heat.

  7. Divide between plates and enjoy.
