Who doesn't love ice cream? We all scream for it. Just because you're doing low carb doesn't mean that you can occasionally treat yourself!

Check out this low carb alternative for a healthy alternative to the high sugar norm.

Cooking Time 15 min


1 cup Canned Coconut Milk (full-fat)

2 1/2 tbsps Powdered Erythritol

A Pinch Sea Salt

1 1/2 tsps Raw Organic Cacao Powder

3/4 tsp Vanilla Extract (pure)

1 tsp Cacao Nibs (sprinkle on top)


  1. Place the coconut milk in the fridge for at least 2 hours or overnight.

  2. Combine coconut milk, powdered Erythritol, salt, cacao powder, and vanilla extract in a high-speed blender and blend on high until you get a creamy consistency.

  3. Eat right away or place in the freezer for 30 to 60 min.

  4. Divide between bowls and sprinkle with cocoa nibs. Enjoy!
