Mexican Spiced Chicken and Vegetables

Serves 2


- 500g boneless, skinless chicken breasts

-1 teaspoon ground cumin

-1 teaspoon garlic powder

-1 teaspoon chili powder

-1 teaspoon paprika

-1/2 teaspoon onion powder

- 2 tablespoons avocado or coconut oil

-1 red pepper, sliced

-1 green pepper, sliced

-1 yellow pepper, sliced

-1 onion, diced

-Salt and pepper to taste


1. Preheat your grill to medium-high heat.

2. In a small bowl, mix together the cumin, garlic powder, chili powder, paprika, and onion powder.

3. Rub the chicken breasts with the spice mixture.

4. Place the chicken on the grill, brush with oil and cook for about 8 minutes per side, or until the chicken is cooked through.

5. Remove the chicken from the grill and set aside.

6. In a large fry pan, combine the remaining oil, red pepper, green pepper, yellow pepper and onion, stir fry until cooked. Season with salt and pepper.

7. Place the vegetables on a serving dish and top with sliced chicken breast.
