SMOKED SALMON AND AVOCADO BOATS

I can never get enough of the combination of creamy and salty and this is a go to recipe for me. I love it. It fills and satisfies!

INGREDIENTS


2 Avocado

4 ozs Smoked Salmon

4 Egg (small size)

1 tsp Lemon Juice (freshly squeezed)

2 Sea Salt & Black Pepper (a pinch to taste)


DIRECTIONS

  1. Heat the oven to and line a baking sheet with parchment paper.

  2. Slice the avocado in half and remove the pit. Use a spoon to scoop out enough avocado to create a slightly bigger hole to make room for the salmon and egg. Transfer the scooped out avocado to a small bowl to eat on the side.

  3. Place the smoked salmon across each avocado half and press down into the hole.

  4. Crack one small egg into each avocado half, drizzle with lemon juice, and season with salt and pepper.

  5. Carefully transfer to the baking sheet and place in the oven. Bake for 15-20 minutes until the egg is cooked through.

  6. Plate and enjoy!
