Sugar Free Coconut Macaroons

- 2 cups unsweetened shredded coconut

- 2 tablespoons melted coconut oil

- 2 tablespoons almond butter

- 1/4 cup monk fruit sweetener

- 1 teaspoon vanilla extract

- 2 tablespoons coconut flour

- Pinch of salt


1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.

2. In a medium bowl, combine the shredded coconut, coconut oil, almond butter, monkfruit sweetener, vanilla extract, coconut flour, and salt. Stir until the ingredients are evenly mixed.

3. Using a tablespoon, scoop out some of the coconut mixture and form it into balls. Place the balls on the prepared baking sheet, about 2 inches apart.

4. Bake for 15-20 minutes, or until the tops of the macaroons are golden brown.

5. Allow the macaroons to cool before serving. Enjoy!
